How to Cook Chicken Cheese Broccoli Casserole
By Richard Cash
Ingredients:
- 1 lb boneless chicken breast
- 1 can condensed cream of broccoli
- 1 8 oz package of sliced Swiss cheese
- 3/4 cup milk
- 12 oz Broccoli, preferably fresh florets
- 1 large egg
- 1 cup flour
- 3 Tbsp Olive oil
- 1 tsp nutmeg
In a pot combine cream of broccoli, Swiss cheese, milk, and broccoli. Heat on medium until the mixture is well blended and thickened. If the mixture is too thin for you, add a little flour. If it's too thick, add a little more milk. You'll get the hang of it!
While the sauce is heating up, pound the chicken breast until each piece is no more than a 1/2 inch thick. Whisk the egg in a bowl. Roll the chicken in flour and then dip the chicken into the egg. In a skillet heat the olive oil medium-high heat (Depends on your stove type). Brown the chicken about 3 minutes each side.
In a baking dish place chicken side by side in the middle. Pour the the cheese sauce evenly over the chicken. Sprinkle the top with nutmeg if desired. Bake at 350 degrees for 20 minutes.
Serves well by itself or with garlic bread.
